The salad and pie diet regimen
Many appeared to be observing this today as they went through the Luby’s line: Spanish slaw accompanied by coconut pie and spinach salad with bleu cheese dressing along with lemon meringue pie were two pairings observed. We thought that by two o’clock the rush would be over. We were wrong. Even though the line of people was four times longer than the serving line, stretching all the way to the door, it moved quickly, so that the tiny children dressed in their church clothes and being wheeled through in those wonderful highchairs kept their good humor. Topping my personal list of reasons to return, as always, were the two kinds of perfect cornbread, plain (square) and jalapeno (wedge-shaped). The meal is ground to be coarse, and sugar is not part of the cornbread flavor. The menu has plenty of the old favorites, including fried chicken, liver and onions, and roast beef sliced on the spot, plus a lot of new chicken and fish dishes that looked very appealing. There were fresh-cut sections of pink grapefruit, and one of the vegetable dishes was fresh steamed whole green beans, both of which were delicious. Luby’s own freshly made salsa was available again. On Sundays, especially, this is one of the very best people-watching spots in town and offers great value and quick service even when it’s busy, busy, busy.
